2005 Estate Sauvignon Blanc
This is the forth vintage of sauvignon blanc that we have produced from our Estate grown fruit. The 2007 vintage was a perfect one allowing full physiological ripeness at around 23 brix. The yield was much better than 2006 at about 2.8 tons per acre.
Harvest of four clones, a field blend if you will, took place the end of August 2007. Hand harvested grapes were sorted and whole cluster pressed. Settled juice was chilled and cold fermented in one stainless steel tank. To preserve the purity of fruit this wine did not go through malo-lactic fermentation nor was it aged in oak barrels. This wine shows the purity of sauvignon blanc that I love yet still expresses a very distinct sense of place.
This wine has a beautiful, light straw color and is brilliantly clear. The nose is beginning to show a touch of crisp gooseberry, maybe even a nuance of muscat. There are lively flavors of ripe white peach and spice; the fruit is in delightful balance with the acidity and the texture is layered and rich. The finish is generous and long; clearly this wine is our finest sauvignon blanc effort to date! Serve well chilled.
